5 Cucumber Cooler Recipes For Soothing Hydration

Right now in south east England, it’s April and we appear to have a mini heatwave upon us.  I mean it’s like we’ve gone straight from winter to summer in the space of about 4 weeks!  Truly bonkers.

So in the sweaty heat of the afternoon, I’ve retired to the shade, and gone about seeking  recipes for natural and refreshing drinks.  Homemade recipes with simple, nourishing ingredients.  And of course, no added sweeteners, sugars, colourings, etc.  Who wants to put any of that crap in their body anyway.

And that brings me to the cucumber cooler.  What better drink to sip and gently revive you when you’re wilting in the heat?

A good cucumber cooler is pure hydration, alongside lots of additional nutrients, vitamins and antioxidants.  And there are wonderful ways to mix up the basic recipe.

But first to the nutrition.

The Cucumber Cooler Nutritional Lowdown

The humble cucumber is easily overlooked cos it’s such a watery vegetable, but it’s actually an important anti-inflammatory food and great as part of a healing alakaline diet.
Indeed, cucumbers contain a whole bunch of critical nutrients:

  • Vitamins A, B1 (thiamine), B5 (pantothenic acid), B7 (biotin), C and K.
  • Minerals – potassium, iron, calcium, manganese.
  • Powerful antioxidant flavanoids including luteolin, quercetin and kaempferol.  Quercetin alone is a particularly powerful natural antihistamine [1].
  • Healing polyphenols such as lignans and other phytonutrients called cucurbitacins, which may have anti-cancer properties [2].
  • The anti-inflammatory compound called fisetin, which has various brain-healing and anti-cancer benefits [3][4].
  • And if that lot isn’t enough to convince you, cucumbers also contain almost no calories, so no worries about eating them if you’re on a weight-loss diet!

5 Cucumber Cooler Recipes

Note:  All of these coolers get better when left for a few hours to chill and to let the flavours thoroughly infuse.

1.  Lemon, Mint & Cucumber Cooler

  • 1 litre / 4 cups chilled water
  • ½ large cucumber, sliced
  • 1 lemon, sliced
  • 1 handful fresh mint

2  Strawberry, Lemon & Herb Cucumber Cooler

  • 2 litres / 8 cups chilled water
  • 1 large cucumber, sliced
  • 6 organic strawberries, hulled and sliced
  • 1 lemon, sliced
  • 1 handful fresh basil
  • 1 handful fresh mint

3  Mixed Berry, Coconut & Cucumber Cooler

  • 1 litre / 4 cups chilled coconut water
  • ½ cucumber, sliced
  • handful blueberries
  • handful strawberries, sliced
  • handful fresh mint
  • 1 lime, sliced

4  Mixed Herb & Cucumber Cooler

Note:  You can of course make ready-made herby ice cubes in advance, to use in this recipe.

  • 1 litre / 4 cups water
  • ½ large cucumber, sliced
  • 1 lemon, sliced
  • 1 lime, sliced
  • 1 handful fresh thyme
  • 1 handful fresh mint
  • 1 sprig fresh rosemary
  • ice cubes, for serving

5  Basil & Cucumber Cooler

  • 2 litres / 8 cups chilled water
  • 1 cucumber, sliced
  • 2 large handfuls fresh basil
  • 2 limes, sliced
