Cauliflower is such an understated, unobtrusive vegetable that its greener sibling broccoli seems to have grabbed most of the lime-light so far.  But the truth is that cauliflower is just as much a nutritional powerhouse, containing heaps of phytonutrients, vitamins and minerals.

Just one cup of cauliflower contains nearly 75% of the official daily requirement of vitamin C.  As well as smaller quantities of vitamins A, E, K, B1, B2, B3, B5, B6 and B9!  And the minerals potassium, magnesium, phosphorous, zinc, manganese and selenium.

Another huge bonus, is that cauliflower’s much milder flavour makes it a far easier ingredient to hide in recipes in which broccoli just wouldn’t work.  And this berry smoothie recipe is one of them!

The cauliflower, spinach, mixed berries and coconut milk, really do make a glorious antioxidant-rich meal for your proper nourishment.

Cauliflower Berry Smoothie Recipe

Note: this berry smoothie recipe makes enough for 2 big servings.


450ml / 2 cups of coconut milk (or other non-dairy milk, such as almond, oat, rice)

300g / 1 cup frozen cauliflower florets

2 big handfuls of fresh organic spinach

50g / 1/2 cup frozen blueberries

50g / 1/2 cup frozen blackberries

8 tablespoons / 1/2 cup of natural live yoghurt

1 tsp ground cinnamon


1 tsp of stevia or rice malt syrup

1/2 tsp vanilla extract

1 pinch sea salt


1  Blend all the ingredients, (using a food processor will be best.)  If you prefer a runnier consistency, feel free to add more liquid.

2  Serve straight away to benefit from the freshness of the ingredients.
