Chocolate-Dipped Coconut & Turmeric Energy Balls

These delicious coconut and turmeric energy balls, certainly live up to their name!  They’re solid, hearty snacks full of energy-rich food, perfect for the lunch box or a long autumnal walk.  The ingredients are full of slow-release energy and antioxidant-rich ingredients like dark chocolate, which has a wealth of healing benefits.

There are also anti-inflammatory spices such as turmeric and ginger, which contain nourishing phytonutrients in the form of curcumin and gingerols.  While coconut oil is a wonderful healthy fat, full of medium-chain tryglycerides and an awesome brain food [1].

Coconut & Turmeric Energy Balls Recipe

Note: Makes about 20 energy balls, depending on how big you roll them.

Ingredients

  • 250g / 2½ cups dessicated/shredded coconut
  • 100g / 3½ ounces dark chocolate 72%
  • 4 tablespoons coconut oil
  • 4 tablespoons raw honey or organic brown rice syrup
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cardamom seeds, crushed

Method

1  Line a baking tray with greaseproof paper.

2  Add the coconut oil, dessicated coconut, honey/syrup, turmeric, ginger, cinnamon and cardamom to a food processor and whizz up until the mixture comes together.

2  Using a tablespoon, scoop up the mixture and form it into bite-size balls using your hands.  Space out the balls on the tray.

3  Pop the tray in the fridge for at least 15 minutes so the balls can chill and firm up.

4  Then melt the chocolate in a heat-proof bowl over a saucepan of simmering water, stirring thoroughly until liquid.  Take each ball and dip half of it in the melted chocolate.  Place them back on the tray and return them to the fridge so the chocolate can set again.

These energy balls last the best part of a week if you store them in the refrigerator.
