These 2 ingredients pancakes really are ridiculously simple and healthy.  The lack of gluten and sugar means they’re super good for your gut and your blood sugar.  And the mixture makes light and scrumptious pancakes which are filling and satisfying.

The recipe includes optional extras, such as vanilla essence for natural sweet flavour and also almond flour, if you prefer a more substantial, traditionally-textured pancake. There’s a measurement for cacao powder too, if like me, you have to try a ‘chocolate’ version of everything.

Bear in mind when you make these 2 ingredients pancakes, the mixture is more delicate than normal pancake batter so treat them gently when you turn them over.  Though to be honest they’re so tasty, it matters little if they’re not perfectly formed.

2 Ingredients Pancakes Recipe

Note: makes enough for about 8-10 small pancakes, which is 2 large portions.

Ingredients

4 large organic eggs

2 ripe bananas

Optional Extras

2 teaspoons vanilla extract

pinch of sea salt

4 tablespoons almond flour

1 tablespoon cacao powder (for a chocolate version)

1 teaspoon ground cinnamon

pinch of baking powder for added fluffiness

Topping Ideas

organic natural yoghurt with raw honey, or organic brown rice syrup

butter and lemon juice

melted dark chocolate

chopped walnuts with berries, eg blueberries, cranberries, stawberries, raspberries, gooseberries

Method

1  Crack the eggs into a blender, add the banana and whizz everything together.  Add any of the optional ingredients you want to use and mix again.

2  Pop a frying pan or skillet on the hob, on a medium heat.  Melt a small knob of butter or coconut oil in the pan.

3  Using a tablespoon as a measure, drop a spoonful of batter into the pan.  Allow it to colour golden brown underneath before you turn it over.  Using a thin spatula to slide under the pancake and then gently flipping it, is best.

4  Once done pop on a plate and repeat with the next spoonful of batter, until you have a stack of little pancakes waiting to eat.  I tend to layer them up with a little butter while I’m going along, so it melts into the stack.

5   Finally, just choose whatever toppings you fancy to adorn your pancake stack.
