Rich Coffee And Chocolate Chia Seed Pudding

chocolate chia seed pudding

This chocolate chia seed pudding is a delight for the taste-buds and also for the body, cos it’s full of super-nourishing ingredients. You can enjoy it as a breakfast, snack or sweet treat at the end of the day – it’s so versatile!  Plus, it’s a no-bake recipe so super easy to chuck together, it just needs that chunk of time in the fridge to set and away you go.

Chia seeds are a particularly nutrient-dense food, packed with important omega-3 fats such as linolenic and alpha-linolenic acid (ALA); minerals like phosphorous, manganese and calcium; as well as vitamins A, B1, B3, D and E.  And there are of course many healing antioxidants in the other ingredients too, particularly in the raw cacao powder and organic coffee.

It’s a chocolate chia seed pudding that can be tweaked in a multitude of ways depending on your tastes and requirements.  This recipe has an added citrus twist with the optional addition of delicious orange extract, as well as a variety of topping choices.  And you can of course throw in anything else you fancy for texture and flavour.

2 teaspoons grated dark chocolate (min. 72% cocoa solids)

1  Add the yoghurt to a mixing bowl and stir in the chia seeds, cacao powder, coffee, honey and orange extract if using.

2  Then using a spoon divide the chia mixture evenly between 4 tumblers and leave them to set in the fridge for at least 12 hours.

3  Finally just before serving, remove your chocolate chia seed puddings from the fridge and add your toppings of choice.  Et voila….thick and delicious puddings of goodness!
